It’s International Hummus Day! What do you do on International Hummus Day? You eat or make hummus. Very simple.

There are lots of kinds of hummus you can make, but all of them need chickpeas, olive oil, and tahini.

Basic Hummus

  • 2 cans chick peas, drained, reserve the liquid
  • 1/2 cup reserved liquid
  • 4 tbsp tahini
  • 1/2 cup fresh lemon juice
  • 1/2 tsp salt
  • 2 tbsp Olive Oil

Put the beans into a food processor and pulse until roughly chopped. Add the salt, reserved liquid, and tahini. Pulse again.

Slowly add in the lemon juice and olive oil. If it is still too thick for you, add a little more olive oil.

If you serve this by itself, drizzle with a teaspoon of olive oil and serve with warm pita bread.

My favorite way to make this is with garlic! Mince 4 cloves of garlic and add them with the beans to the food processor. Use Garlic Olive Oil instead of EVOO. Magnificent!
